Nasi Goreng Terasi

Nasi Goreng is one of Indonesia’s most iconic dishes, made by stir-frying cooked rice with a mix of spices, aromatics, and complementary ingredients. Although widely known as a signature Indonesian comfort food, its origins trace back to China before evolving into countless regional variations across Indonesia. This version highlights the bold aroma of terasi, creating a deep, savory, and slightly smoky flavor that makes the dish richer and more authentic.

Main Ingredients

  • Salt to taste

  • 1 stalk spring onion, sliced

  • 2 tbsp sweet soy sauce

  • 3 tbsp cooking oil

  • 750 g cooked white rice

Blended Spices

  • 2 roasted candlenuts

  • 2 tsp terasi

  • 4 cloves garlic

  • 3 red bird’s eye chilies

  • 5 shallots

  • 7 red chilies

Garnish and Sides

  • 1 stalk celery, thinly sliced

  • 1 tomato, sliced

  • 1 cucumber, sliced

  • 2 eggs, made into a thin omelet

HOW TO MAKE

  1. Heat the cooking oil in a pan, then sauté the blended spices and spring onion until fragrant and cooked. Adjust the level of spiciness by adding or reducing chilies.

  2. Add the cooked white rice and sweet soy sauce. Stir until evenly mixed.

  3. Add salt to taste. Continue cooking until the seasoning is fully absorbed into the rice.

  4. Remove from heat and serve warm with celery, tomato, cucumber, and sliced omelet.
